There isn't any one way, Mark - it's going to be the method that you are most comfortable with, after a few models you'll find it! With biplanes, I generally finish the fuselage, then paint the lower wing top surface, and the upper wing lower surface before adding the wings - I like to rig biplanes, and this reduces the amount of tricky painting. If, however, like the Fokker DVII, it's covered in lozenge decals, you have to wing it!
